Roasted Radishes with Baby Carrots (Cycle 3)

Here’s a simple and easy recipe from my newly released book called Low-Carb Recipes for the 17 Day Diet for those who are in Cycle 3 of the 17 Day Diet. ¬†There’s nothing quite like the taste of roasted radishes and carrots.


Roasted Radishes with Baby Carrots

1 bunch small to medium radishes, about 12
12 baby carrots
1 tablespoon olive oil
1 teaspoon dried thyme
Salt and Pepper to taste
1/2 Lemon


Preheat the oven to 450 Degrees F.

Place the radishes and carrots on a baking sheet and toss with the olive oil, thyme, salt, and pepper. Roast until tender yet firm in the center, about 20 to 25 minutes. Squeeze with a little lemon juice and serve.

Yields 4 Servings
