Just because you’re on a diet doesn’t mean you have to sacrifice flavor! For those on Cycle 2 or 3 of the 17 Day Diet, here is a fantastic, velvety French Onion Soup. Enjoy!
French Onion Soup
Ingredients
1/4 pound beef, thinly sliced
Whole onion, thinly slice
Non-fat, low-sodium beef or vegetable broth
1 garlic clove, roasted and minced
Salt and pepper
3 tablespoon Low-Fat Mozzarella Cheese
Directions
Place onions into an oven-proof saucepan. Add enough broth to cover half the onions. Cook until onions are tender. Season with salt and pepper, to taste.
Preheat broiler. Add thinly sliced beef to the onions and broil for 5 minutes.
Top with mashed roasted garlic and mozzarella cheese and broil or another 3-5 minutes until cheese starts to brown.
Yields 1 Serving
Approved for cycles 2 and 3

I am cycle 2 ,can i eat dark chocolate with no sugar added.with berries flavour?
Maissa, in the book the doc tells us to limit to 1/2 to 1 ounce of dark chocolate a day if you really need it. Try to stick with no sugar added. Check the ingredients for the chocolate you’re referring to see to see if the berries add a lot of extra sugar (sometimes it’s just flavor and sugar and no fruit).
why wouldn’t you be able to have this on C1 if you used vegetable broth?
Pam, it’s the actual beef that makes it approved for Cycle 2 or beyond, not the broth.
How does this become soup if you only fill the broth to half way up the onions?
Leslie, this is for one serving and you can add extra broth if you want more soup.
Hi Torey…saw my doctor today and he is impressed with most of the 17 day diet. However, he wants me to really cut the carbs wayyyyyyyy down and focus on the ”good fats”. Avocado, olives, olive oil, etc. What is the name of your low carb cookbook and where can I get it? Any info greatly appreciated.
Hi Katherine! The recipe book mentioned in this post is no longer for sale (I’ll update that in a moment). I do, however, have a low-carb recipe book for Cycle 1 called Yummy! and you can find it here: https://17ddblog.com/yummy/
Torey, is there a way to make French onion soup for cycle 1, not using meat just using onion and broth maybe with a smidgen of cheese? Also can we have sugar free hard candy? Thanks,Karen
Of course! Most recipes are customizable to be cycle 1 compliant. You could easily use chicken instead of beef if you want to keep protein in this dish. Keep the cheese the same. It’s approved all cycles in moderation under the condiment section!
