Salad in a Jar (Quinoa, Mushrooms, Tomatoes and Spinach)

I found this Salad in a Jar recipe while searching online for Salad in a Jar recipes!

One website referred to me to the original source, so I wanted to make sure to give credit to where the credit is due.

There wasn’t much modifying on this recipe as it is very 17 Day Diet friendly.

Quinoa is allowed on Cycles 2 and 3.

If you want to use this for Cycle 1, just omit the quinoa and consider using other veggies in its place such as sliced carrots and cucumbers.

Salad in a Jar (Quinoa, Mushrooms Tomatoes and Spinach)

Makes 2 salads (Salads pictured were made in 32 oz mason jars)

1 cup cooked quinoa
2 big handfuls spinach
1 cup chopped mushrooms
1 cup cherry tomatoes
1/2 red onion, diced
4 tbsp balsamic Vinaigrette (low-fat store bought or make your own using Balsamic Vinegar, Olive Oil and seasonings)

Layer half of each ingredients in a mason jar as follows:

dressing
onion
mushrooms
tomatoes
quinoa
spinach
The secret to keeping your salads in a jar fresh is to make sure that the dressing is always on the bottom and your salad greens are at the top.
