It’s low carb, high in protein and full of fiber from the spinach and berries.

There’s nothing better than a simple salad with BIG flavor! The ingredients are basic, but the flavor of the combination is out of this world.

  • Strawberries
  • Feta or Goat Cheese
  • Homemade Ranch Dressing (recipe below)

Grilled Chicken Salad With Summer Berries

Prep Time: 10 minutes

This Grilled Chicken Salad with Summer Berries is a refreshing meal during warm months.

Ingredients

  • 1/2 Boneless, Skinless Chicken Breast, grilled and sliced
  • Spinach (or your favorite greens), enough for 1 salad
  • 1/4 Cup Fresh Blueberries
  • 1/4 Cup Fresh Strawberries (halved and kept whole)
  • Feta Cheese or Goat Cheese Crumbles

Optional Healthy Fats:

  • Walnuts
  • Avocado
  • Hemp Seeds

For the Homemade Ranch Dressing

  • 1/4 cup Greek yogurt
  • 1/4 cup sour cream
  • 3/4 teaspoons chopped fresh dill (or 1/4 teaspoon dried dill)
  • 3/4 teaspoons chopped fresh parsley (or 1/4 teaspoon dried parsley)
  • 3/4 teaspoons chopped fresh chives (or 1/4 teaspoon dried chives)
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon onion powder
  • Salt and Pepper, to taste
  • 3/4 teaspoons fresh lemon juice

Instructions

  1. Add spinach or your favorite salad greens onto a plate or large bowl.
  2. Place sliced grilled chicken breast over the top of the greens and strategically place blueberries and strawberries over the top.
  3. Sprinkle feta or goat cheese (or your favorite cheese) over the top.
  4. Serve with homemade ranch dressing or your favorite vinaigrette dressing.

For the Homemade Ranch Dressing:

  1. In a small bowl, combine the Greek yogurt and sour cream and stir until smooth.
  2. Add the chopped dill, parsley, and chives, along with the garlic powder, onion powder, salt, and black pepper. Stir to combine.
  3. Add the lemon juice and stir again until everything is well mixed.
  4. Taste and adjust seasonings as needed. If the dressing is too thick, you can thin it out with a little bit of water.
