Roasted Carrots are the perfect side dish to any meal

Roasted Carrots

Yield: 4 Servings
Prep Time: 5 minutes
Active Time: 20 minutes
Total Time: 25 minutes

Roasted Carrots are wonderful and the roasting process brings out their yummy natural sweetness.

Ingredients

  • 8 medium size carrots
  • 1 1/2 tablespoons olive oil
  • Salt and Pepper to taste
  • 2 tablespoons minced fresh dill or parsley (optional)

Instructions

  1. Preheat the oven to 400 degrees F.
  2. Slice the carrots diagonally in 1 1/2-inch-thick slices. If carrots are extra thick, cut in half-length-wise.
  3. Toss the carrots in a bowl with the olive oil, salt, and pepper.
  4. Transfer to a sheet pan in a single layer and roast for 20 minutes, until browned and tender.
  5. Toss the carrots with minced dill or parsley (optional), season to taste, and serve.
