Here’s a simple and easy recipe if you’re on Cycle 3 of the 17 Day Diet. There’s nothing quite like the taste of roasted radishes and carrots.
Roasted Radishes with Baby Carrots
1 bunch small to medium radishes, about 12
1 small bag of baby carrots
1-2 tablespoons olive oil
1 teaspoon dried thyme
Salt and Pepper to taste
Preheat the oven to 450 Degrees F.
Place the radishes and carrots on a baking sheet and toss with the olive oil, thyme, salt, and pepper. Roast until tender yet firm in the center, about 20 to 25 minutes. Squeeze with a little lemon juice and serve.
Yields 3-4 Servings
