Radishes are a favorite lower carb root veggie if you’re trying to stay away from more starchy vegetables such as white potatoes. Some say that when radishes are roasted really well, they often taste like potatoes!
Radishes are a popular option for those on a Keto Diet and this Roasted Radishes & Carrots recipe is also a simple and easy side dish if you’re on Cycle 3 of the 17 Day Diet.
This dish can also be used on the 17 Day Kickstart Diet, too. Keep reading as I’ll let you know which phase this is allowed in.
There’s nothing quite like the taste of roasted radishes and carrots.
Ingredients for Roasted Radishes & Carrots
Well, you don’t have to be a rocket scientist to know that you’ll need radishes and carrots in order to make this recipe.
With all kidding aside, you’ll also use a bit of dried thyme and well as salt and pepper and a squeeze of lemon juice to bring a freshness to the dish!
Non-Starchy Vegetable Alternative
Like I mention earlier, radishes are a great alternative to a higher starch content vegetable like potatoes.
When roasted, the flavor of radishes (or any vegetable really) are out of this world.
In fact, I prefer my vegetables roasted most of the time due to the added flavor of the caramelization of the veggies!
For this recipe, you’ll be cutting your vegetables. However, if they are on the smaller side, you can certainly leave them whole.
If you do cut them, there are more opportunities for cut edges to brown, which means more flavor!
Radishes on the 17 Day Diet
If you’re on the 17 Day Diet, radishes are allowed starting in Cycle 3.

Radishes on the 17 Day Kickstart Diet
Unlike the original 17 Day Diet, radishes can be eaten on the Kickstart Diet from the start.
Starting in the 3-Day Scrub Phase, you’ll see radishes listed on the “Non Starchy Vegetable” section of the 17 Day Kickstart Diet Food List.
However, carrots are allowed starting on the 4-Day Soak Up Phase.
If you want to use this recipe as-is, wait until day 4.
Roasted Radishes & Carrots for the Keto Diet
Radishes make a great alternative to white starchy potatoes, especially if you’re on a Keto Diet.
Depending on your macros, you may want to limit the number of carrots you eat (they make great leftovers!).

Roasted Radishes & Carrots
Roasted Radishes, along with carrots, make a great lower carb alternative to a higher starch potato.
Ingredients
- 1 bunch small to medium radishes, about 12-14
- 1 pound of carrots
- 1-2 tablespoons olive oil
- 1 teaspoon dried thyme
- Salt and Pepper to taste
- 1/2 Lemon
Instructions
- Preheat the oven to 450 Degrees F.
- Trim radishes and slice in half (if very thick)
- Next, peel and trim carrots, cutting them into rectangular slices
- Place the radishes and carrots on a baking sheet and toss with the olive oil, thyme, salt, and pepper.
- Roast until tender yet firm in the center, about 20 to 25 minutes. Squeeze with a little lemon juice and serve.
