This Parmesan-Roasted Cauliflower recipe is low carb and low fat, so it’s perfect for the 17 Day Diet.

If you want to spice things up a bit, you might want to experiment with adding a few other seasonings such as chili powder, paprika, chili flakes or a warm curry seasoning!

Add warm spices to your dishes to deepen the flavors!

Roasted Cauliflower with Parmesan
Yield: 4

Parmesan-Roasted Cauliflower

Prep Time: 5 minutes
Cook Time: 20 minutes
Total Time: 25 minutes

Tender roasted cauliflower topped with yummy Parmesan cheese!

Ingredients

  • 1 large head cauliflower, cut into florets
  • 1/4 cup grated Parmesan cheese
  • 12 Garlic Cloves
  • 1/4 teaspoon garlic powder
  • Salt and Pepper, to taste
  • 2 Tablespoons olive oil
  • 2 teaspoon chopped fresh parsley leaves (optional)
  • Lemon wedges for serving (optional)

Instructions

  1. Preheat oven to 425 degrees F.
  2. In a medium bowl, combine the cauliflower, cheese, garlic cloves, garlic powder, salt and pepper and olive oil. Toss to mix.
  3. Transfer the cauliflower to a small nonstick baking dish.
  4. Bake for 20 to 25 minutes, tossing once half way through, or until lightly browned and crisp-tender.
  5. Garnish with parsley (optional).
  6. Garnish with lemon wedges (optional).
  7. Serve immediately.

  1. I’ve found I have to use slightly more olive oil than the recipe states to get the parmesan to stick well when choosing but otherwise we have had this dish a few times and loved it.
