Wild Blueberry Nice Cream is a better-for-you ice cream using few ingredients and no added sugar

If you’re like me and you have a sweet tooth and you want to reach for something that’s not going to derail your weight loss, look no further than this Wild Blueberry Nice Cream (aka better-for-you ice cream).

I chose Wild Blueberries for this particular recipe, but you can use your favorite berry. I personally like wild blueberries for a host of different reasons. 

I go into more detail about the health benefits of wild blueberries over at my Lavender Haze Superfood Smoothie recipe (yes, named after Taylor Swift’s famous song!), but I’ll summarize them for you below.

Wild Blueberries Health Benefits

Wild Blueberries are smaller and contain less water than regular cultivated blueberries you’d buy in the produce department. They have a more intense flavor (tangy and sweet) and they hold their shape better when cooking with them.

We always hear that blueberries are full of antioxidants. Well, did you know that Wild Blueberries contain twice the amount of antioxidants per serving than cultivated blueberries?

They also contain twice the fiber and less sugar than regular blueberries. 

Wild Blueberries are also full of vitamins, minerals, micronutrients (Iron, Vitamin C, folic acid and manganese).  In fact, they contain eight times more manganese than cultivated blueberries. 

There my new favorite superfood and I use them in my smoothie every day!

Wild Blueberry Nice Cream Ingredients

Like most of my recipes, this one in particular is very easy to make. It includes just a small handful of ingredients, including:

  • Frozen Wild Blueberries (your favorite frozen berry)
  • Frozen Bananas
  • Coconut or Unsweetened Almond Milk
  • Vanilla Extract
  • Pinch of Sea Salt (I use Maldon Sea Salt from England)

Berry Nice Cream Alternatives

Like I mentioned earlier, I really love the health benefits of Wild Blueberries, but if you don’t have these in your freezer, or if you want to use what you have, here are a few alternative berries to use in this recipe:

  • Any frozen berry blend
  • Frozen Strawberries
  • Frozen Cherries
  • Frozen Raspberries
  • Frozen Blackberries
  • Frozen Regular Blueberries
  • Fresh Berries (if you have them and need to use them up!)

No-Banana Nice Cream (Substitutions)

If you want to skip the banana, here are a few substitutions to make this nice cream even more low carb:

  • 1 Cup Mashed Cooked Sweet Potato
  • 1 large avocado, cubed
  • 1 Cup frozen mango
  • 1 Cup Silken Tofu

Optional Nice Cream Boosters

If you want to increase your nutritional profile of your Wild Blueberry Nice Cream, consider adding any of the following to your recipe:

  • Whey Protein Powder
  • Collagen Powder (I really like the Codeage brand)
  • Chia Seeds

Wild Blueberry Nice Cream for the 17 Day Diet

If you’re eating low carb on the 17 Day Diet, you can certainly enjoy this Wild Blueberry Nice Cream starting on Cycle 3 of the 17 Day Diet.

Let’s face it – bananas are approved starting Cycle 3 and there’s really no way around it.

Now, if you checked out my banana substitutions above, you can easily swap banana for a lower carb item, but it will likely still be approved for Cycle 3!

Can I have Wild Blueberry Nice Cream on the Kickstart Diet?

Yes, you can definitely have this yummy nice cream while on the 17 Day Kickstart Diet. You can have this dish starting on the 4-Day Soak Up Phase when bananas are allowed.

Also, keep in mind, you’ll want to stick with coconut milk as almond milk is allowed starting on Day 10.

When you're looking for a sweet treat, reach for this Wild Blueberry Nice Cream, a healthier dessert option for weight loss.

Ingredients

  • 2 Medium Ripe Frozen Bananas, peeled and sliced
  • 1 Cup Frozen Wild Blueberries (or regular blueberries or your favorite berries)
  • 1/4 Cup Coconut Milk or Unsweetened Almond Milk
  • 1/2 teaspoon vanilla
  • Pinch Flaky Sea Salt

Instructions

  1. Add ingredients to a blender or food processor and blend well.
  2. Transfer the nice cream to a container, cover and allow to freeze for 2 to 3 hours.
  3. Serve with fresh berries (optional)
