Ingredients for Broccoli Egg Bites
This egg muffin recipe is fairly simple to make. It only includes a few key ingredients, which include:
- Eggs
- Broccoli
- Cheddar cheese
- Italian seasoning

If you’re not a fan of broccoli, here are a few ideas on ingredients you can use instead:
- Spinach
- Asparagus
- Zucchini
Additional Ingredients For The Broccoli Egg Bites
If you want pack your egg bites with even more fiber, consider adding in these extra veggies that compliment broccoli very well:
- Cherry Tomatoes
- Onions
- Red or Yellow Bell Pepper
- Green Bell Pepper (if you prefer something more savory)
- Mushrooms
Add Sausage To Your Egg Breakfast Muffins
If you’re looking to boost the protein in this recipe, or you just like the flavor of sausage with your eggs, then by all means add sausage to this recipe.
It doesn’t take much sausage as this recipe only yields six muffins.
Brown a quarter pound of sausage and add it to your muffin tins when you add the other ingredients per the instructions below.
You can easily make your own sausage to add to this recipe so you control the sugar and sodium yourself. Check out my Chicken Apple Sausage recipe (omit the apple and you’re good to go).
Use Silicone Cups to Bake Your Egg Bites
I’ve mentioned using silicone cups in previous recipes and there’s good reason why!
Most likely, if you use non-stick spray, your egg cups will likely stick to your pan and you definitely don’t want to deal with this! Trust me!
I recommend picking up a half dozen of these Silicone Baking Cups or even a full silicone muffin tray so you don’t have to worry about scraping your egg bites out of the tin or cleaning up a huge mess or leaving a ton of food behind!
If you don’t have silicone baking cups handy and you want to make this recipe stat, then try spraying paper cups to keep your tin clean!
Can You Freeze Broccoli Egg Bites?
These Broccoli Egg Bites are the ideal breakfast to bake in batches, freeze and reheat for future breakfasts.
They are such a time saver for busy mornings!
If you’re the type of person who doesn’t mind freezing leftovers, this is going to be your new favorite way to batch bake and freeze!
Here are the steps you’ll need to take to successfully preserve a batch or two for future meals:
Step 1 – Freeze The Egg Bites
If you happen to own a vacuum sealer, then you’re going to have the easiest time keeping your frozen egg bites as preserved as possible.
If you do have a sealer machine, make sure you freeze your muffins overnight inside a sealed container or resealable bag before you vacuum seal. If you don’t freeze them first, you’ll squish your muffins if you seal them fresh.
If you don’t have a vacuum sealer, allow your egg bites to cool completely in the refrigerator prior to freezing them.
Add the egg cups to a sealable bag and try to remove as much air as possible before sealing the bag.
Place them in your freezer and keep them there until future use. As always, make sure you write the date on the bag to keep track of dates!
Step 2 – Defrost & Reheat Egg Bites
The night before you want to eat your egg bites, take two out of the freezer and allow them to thaw out in the refrigerator overnight in a sealed container or sealable storage bag.
The next morning, place your egg bites in the microwave and reheat in 30 second intervals, checking in between each interval to see if they are warm enough as every microwave is different.
Most likely, 30 seconds will be sufficient, especially if they are fully defrosted from the night before.

Can I have Broccoli Egg Muffins on the Kickstart Diet?
Yes, you can definitely have these egg bites while on the 17 Day Kickstart Diet. You can use this recipe starting on the 4-Day Soak Up Phase when eggs are allowed.
Skip the cheese until the 10-Day Stabilize Phase, and you’re good to go!

Are Broccoli Egg Bites Keto Friendly?
If you’re on the Keto Diet, these egg bites can be eaten as is and they provide a good amount of protein to start your day. As always, make sure you use full fat cheese whenever possible.
To boost the fat intake a bit, consider adding bacon or sausage – a 1/4 pound cooked meat is sufficient to add to the egg muffins.

Broccoli Egg Bites
These low carb Broccoli Egg Bites are easy to freeze and reheat so you can grab and go on busy mornings.
Ingredients
- 5 Large Eggs
- 1 teaspoon dried Italian Seasoning (or your favorite herb)
- 1 cup broccoli florets (chopped into small pieces)
- 1/4 Cup Shredded Cheddar Cheese
- Salt and Pepper, to taste
Instructions
- Preheat the oven to 400 degrees F.
- Line 6 regular size muffin tin with either silicone liners or spray with non-stick cooking spray.
- In a large bowl, add the eggs, dried Italian Seasoning and salt and pepper and beat well. Set aside.
- Evenly disperse chopped broccoli into each tin.
- Next, pour the egg mixture evenly into each tin and gently stir each tinned mixture with a spoon or fork.
- Next, add a sprinkle of cheddar cheese over the top of each tin.
- Bake for 13 to 15 minutes, or until egg muffins are cooked through completely.
- Store leftovers in air-tight containers inside the refrigerator.
