Filled with low carb veggies, lean turkey and Italian spices, this soup will definitely hit the spot on a cold day!

Turkey Soup Recipe

This turkey soup recipe calls for ground turkey, but if you have leftover turkey from the holidays, you can easily use up your leftovers in this simple recipe.

If you’re not a fan of turkey, no worries – this recipe is super versatile, and I’ll give you some suggestions on substitutions a little later on.

Turkey Soup Recipe Ingredients

Like most of my recipes, this soup is simple to make.  It only includes a few key ingredients, which include:

  • ground turkey
  • onion
  • carrots
  • celery
  • garlic cloves
  • Italian Seasoning
  • diced tomatoes with juice (or fresh tomatoes)
  • low-sodium chicken broth
  • green beans (Fresh, Frozen or canned)

Substitutions for Group Turkey Soup Ingredients 

If you’re not a fan of certain ingredients, or want to add even more veggies to your turkey burger soup, here are a few ideas:

  • Ground chicken, beef or pork
  • Shredded cooked chicken breast
  • Leftover turkey from the holidays

Here are a few ideas for substitutions for veggies (or to add even more veggies to your soup):

  • Spinach (this was in the original recipe)
  • Kale
  • Mushrooms
  • Zucchini
  • Broccoli 
  • Cabbage
  • Cauliflower

Low Carb Turkey Soup for the 17 Day Diet

If you’re eating low carb on the 17 Day Diet, you can certainly have this on all cycles of the diet.

After all, it was created for my cycle 1 meal plan, so it’s approved starting on day 1.

Now, if you choose to add additional vegetables, or make substitutions, make sure what you’re using is approved for the cycle you’re currently on.

Can I have this Turkey Soup on the Kickstart Diet?

Yes, you can definitely have this yummy turkey soup while on the 17 Day Kickstart Diet. If you make no changes to this recipe, you can have this soup starting on the 4-Day Soak Up Phase.

Would you like soup starting on the 3-Day Scrub Phase? If so, simply omit the carrots.

Do you prefer to  make this soup more plant forward? If so, you can omit the ground turkey and use your favorite approved legumes instead.

Keto Turkey Soup

If you’re on the Keto Diet, this soup can be eaten as is. Depending on your macros, you may want to limit the amount of onions or carrots you use.

You may also want to increase your fat content by using a fattier meat such as beef or pork.

Low carb Turkey Burger Soup for weight loss

This low carb turkey soup is delicious on a cold day
Yield: 4-5 Servings

Turkey Burger Soup

Prep Time: 10 minutes
Cook Time: 35 minutes
Total Time: 45 minutes

This nutrient-dense Turkey Burger Soup is a great low carb soup for weeknights when you need something savory and easy to make.

Ingredients

  • 1 pound ground lean turkey (or your favorite meat)
  • Olive oil
  • 1 small onion, diced
  • 3 Carrots, peeled and sliced or diced
  • 2 Celery Stalks, sliced
  • 2 garlic cloves, minced
  • 1 teaspoon Italian Seasoning (or more to taste) or use your favorite herbs
  • 1 15oz can diced tomatoes with juice (or 2-3 ripe medium tomatoes)
  • 6 cups low-sodium chicken broth
  • 1 Cup Diced Green Beans (Fresh, Frozen or canned)
  • Salt and Pepper, to taste

Instructions

  1. Heat a drizzle of olive oil in a large pot on medium high.
  2. Add the ground turkey and cook until almost done. Season with salt and pepper.
  3. Add the diced onion, carrots and celery to the pot. Saute for about 5 to 6 minutes, until the onion is translucent.
  4. Next, add the minced garlic and Italian Seasoning and saute for 30 seconds.
  5. Next, add the diced tomatoes with juice, broth, and salt and pepper to taste.
  6. Allow to simmer for about 20 minutes or so.
  7. Finally, add the green beans to the soup during the last 10 minutes of cooking until they are warmed through.

17 Day Diet - all cycles

17 Day Kickstart Diet - 4-Day Soak Up and 10-Day Stabilize Phase (omit carrots for the 3-Day Scrub Phase)

Keto Diet - may need to limit carrots and onions depending on your macros
